Ingredients
  

Main Ingredients

  • 2 cups Japanese short-grain rice (uncooked)
  • 2 ¼ cups water for cooking the rice
  • ¼ cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt

Fillings

  • 1 fillet sushi-grade salmon thinly sliced
  • 1 ripe avocado sliced
  • ½ cucumber julienned
  • 2 tbsp sesame seeds lightly toasted
  • 2 tbsp spicy mayonnaise mix mayonnaise with sriracha

For Serving

  • nori sheets 4 sheets
  • soy sauce as needed
  • pickled ginger as needed
  • wasabi as needed

Instructions
 

  • Rinse the rice under cold water until the water runs clear, removing excess starch.
  • Cook the rice with 2 1/4 cups of water in a pot or rice cooker until tender, then transfer to a large bowl.
  • Gently fold in the rice vinegar, sugar, and salt while the rice is still warm to create perfectly seasoned sushi rice.
  • Prepare your fillings by thinly slicing the salmon, slicing the avocado, and julienning the cucumber. Mix the spicy mayonnaise in a small bowl.
  • Place a nori sheet on a bamboo mat with the shiny side down and spread a thin layer of rice over it, leaving a small border at the top.
  • Arrange the salmon, avocado, and cucumber in a line down the center of the rice, and drizzle with spicy mayonnaise.
  • Carefully roll the nori using the mat, tucking in the fillings as you go, and moisten the top border with water to seal the roll.
  • Using a sharp, wet knife, slice the roll into pieces, sprinkle with toasted sesame seeds, and serve with soy sauce, pickled ginger, and wasabi.

Notes

Ensure all fish is sushi-grade and use a very sharp knife for clean cuts. Adjust the amount of spicy mayonnaise according to taste, and keep a bowl of water nearby to wet your hands when handling the sticky rice.
