Beet Bliss: A Vibrant Salade de Betteraves with Citrus Vinaigrette
This vibrant Salade de Betteraves features a mix of roasted beets, crispy quinoa, and fresh herbs, all tied together with a refreshing citrus vinaigrette. A perfect dish for any occasion, this salad balances sweet, earthy, and tangy flavors with a satisfying crunch.

For the Citrus Vinaigrette
3tbspolive oil
2tbspfreshly squeezed orange juice

1tbspapple cider vinegar

Instructions
Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and roast for 45-60 minutes, or until tender. Alternatively, boil the beets for 30-40 minutes until they can be easily pierced with a fork. Once cooked, allow them to cool, then peel and slice into wedges.
In a large salad bowl, combine the arugula, sliced beets, goat cheese, walnuts, crispy quinoa, and radishes. Gently toss to mix the ingredients.
In a small bowl, whisk together the olive oil, orange juice, lemon juice, apple cider vinegar, Dijon mustard, honey, salt, and pepper until emulsified.
Drizzle the vinaigrette over the salad and toss gently to coat the ingredients evenly. Garnish with fresh dill before serving.
Notes
If using different beet varieties, be mindful of their individual roasting times as they may vary slightly. Customize by substituting goat cheese with feta or leave it out for a dairy-free version.
