Ingredients
  

Pie Crust

  • 1 pack pre-made pie crust or homemade

Filling

  • 3 cups strawberries hulled and halved
  • 3 cups rhubarb chopped
  • 1 cup granulated sugar adjust based on sweetness of strawberries
  • 3 tbsp cornstarch or 2 tablespoons instant tapioca
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter cut into small pieces
  • 1 egg egg beaten (for egg wash)
  • ¼ tsp cinnamon optional, for added flavor

Crumble Topping

  • ½ cup oats
  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • ¼ cup cold butter cut into small pieces

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the strawberries, rhubarb, sugar, cornstarch (or tapioca), lemon juice, vanilla extract, and cinnamon if using. Toss until the fruit is evenly coated.
  • Roll out your pie crust and place it in a 9-inch pie dish. Pour the fruit mixture into the crust, spreading it evenly.
  • Dot the filling with small pieces of butter.
  • If using a crumble topping, combine oats, brown sugar, flour, and cold butter in a bowl. Mix with your fingers until the mixture resembles coarse crumbs, then sprinkle over the fruit filling.
  • Place the top crust over the filling, or create a lattice pattern. Brush with beaten egg for a golden finish.
  • Bake in the preheated oven for 50-60 minutes, or until the crust is golden and the filling is bubbling.
  • Allow the pie to cool for at least 2 hours before serving to allow the filling to set.

Notes

Adjust the sugar based on the ripeness of the strawberries to avoid an overly sweet or tart pie. Letting the pie cool completely before slicing ensures that the filling sets properly.
