Ingredients
  

Burger Patty Ingredients

  • 1 lb lean ground bison
  • ½ cup fresh blueberries, lightly mashed for mixing into the patty
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg, lightly beaten
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • 1 tsp fresh thyme leaves

Burger Assembly

  • 4 whole grain burger buns
  • 1 cup arugula
  • 4 slices low-fat feta cheese

Blueberry Compote

  • 1 cup fresh blueberries
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • ½ tsp lemon zest

Instructions
 

  • In a small saucepan, combine blueberries, balsamic vinegar, honey, and lemon zest. Simmer over low heat for 8–10 minutes until the blueberries break down slightly. Set aside and let cool.
  • In a large mixing bowl, gently combine ground bison, mashed blueberries, red onion, garlic, egg, salt, black pepper, smoked paprika, and thyme. Mix just until combined to maintain a tender texture.
  • Divide the mixture into four equal portions and gently shape each into a patty.
  • Heat olive oil in a skillet or grill pan over medium-high heat. Cook each patty for 4–5 minutes per side until desired doneness is reached.
  • Toast the whole grain buns lightly. Assemble each burger by placing a patty on a bun, topping with a slice of feta cheese, a generous spoonful of blueberry compote, and a handful of arugula. Serve immediately.

Notes

Avoid overmixing the bison mixture to maintain tenderness. Adjust seasoning to taste. Blueberry compote can be made in advance and stored in the refrigerator for up to 2 days. For a spicier version, add red pepper flakes.
