Burritos de Chorizo Reinvented

Ingredients

  • 1 lb chorizo sausage, casing removed
  • 4 large flour tortillas
  • 4 large eggs, lightly beaten
  • 1 cup canned black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 medium onion, finely diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 medium tomato, seeded and diced
  • ½ cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tbsp olive oil
  • salt and pepper, to taste

Instructions
 

  • In a bowl, combine the diced tomato, chopped cilantro, and lime juice. Season with a pinch of salt and set aside to let the flavors meld.
  • Heat olive oil in a large skillet over medium heat. Sauté the diced onion and minced garlic until translucent, then add the chorizo. Cook until the chorizo is browned and crumbled.
  • Add the diced red bell pepper and sauté for 3–4 minutes until softened. Push the chorizo and vegetables to one side of the skillet and pour in the beaten eggs. Scramble gently until just set, then mix with the chorizo mixture.
  • Warm the flour tortillas on a dry skillet. Place a generous scoop of the chorizo mixture in the center of each tortilla, add a portion of black beans, a sprinkle of shredded cheddar cheese, and a spoonful of the tomato-cilantro salsa.
  • Fold the sides of the tortilla over the filling and roll tightly. Optionally, return the burritos to the skillet to toast lightly on all sides, sealing in the flavors.
  • Slice each burrito in half and serve immediately with extra salsa or guacamole on the side if desired.

Notes

For a healthier twist, consider using whole wheat tortillas and low-fat cheese. Be careful not to overcook the eggs to maintain a soft texture inside the burrito.
