  • 3 cups bread flour
  • 1 teaspoon kosher salt
  • 1 teaspoon instant yeast
  • 1 cup warm water
  • ¼ cup plain yogurt
  • 2 tablespoons extra-virgin olive oil plus more for brushing

Instructions
 

  • In a large bowl, combine bread flour, kosher salt, and instant yeast.
  • Mix warm water, yogurt, and olive oil in a separate bowl. Add to the dry ingredients and stir to form a shaggy dough.
  • Knead the dough on a floured surface for 8–10 minutes until smooth. Place in an oiled bowl, cover, and let rest for 1–2 hours or until doubled in size.
  • Divide the dough into 6 portions and shape each into a ball. Rest for 15 minutes.
  • Preheat grill to medium-high heat. Roll each ball into a thin, flat shape.
  • Grill flatbreads for 1–2 minutes per side, brushing with olive oil and adding optional toppings as desired.
  • Serve immediately with dips or as a side dish.

Notes

For deeper flavor, refrigerate dough overnight. Experiment with toppings like za'atar or parmesan for unique flavors.
