Ingredients
  

Crust

  • 1 ½ cups churro dough prepared from scratch or store-bought
  • ¼ cup granulated sugar
  • 2 tsp ground cinnamon

Cheesecake Filling

  • 3 8 oz packages cream cheese softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla bean paste or high-quality vanilla extract
  • Zest of 1 lemon

Topping

  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • Caramel sauce or chocolate ganache optional

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Roll out the churro dough and press it into the bottom of a greased 9-inch springform pan.
  • Combine the sugar and cinnamon in a small bowl and sprinkle it generously over the dough.
  • Bake the crust for 10-12 minutes, or until it’s golden brown. Set aside to cool.
  • In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla bean paste and lemon zest until fully incorporated.
  • Pour the cheesecake filling over the cooled churro crust.
  • Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly.
  • Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour.
  • Transfer to the refrigerator and chill for at least 4 hours, preferably overnight.
  • Before serving, mix the sugar and cinnamon for the topping and sprinkle it over the cheesecake. Optionally, drizzle with caramel sauce or chocolate ganache.
  • Carefully remove the cheesecake from the springform pan, slice, and serve.

Notes

Ensure the cream cheese is fully softened before mixing to avoid lumps in the cheesecake filling. For an extra crispy crust, consider lightly frying the churro dough before pressing it into the pan. This recipe can be adapted by adding a swirl of fruit compote or chocolate ganache to the cheesecake filling for a different flavor profile.
