Ingredients
  

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • 2-4 tbsp ice water

Filling

  • 4 large eggs
  • 1 cup heavy cream
  • ½ cup whole milk
  • 1 cup Gruyère cheese shredded
  • 1 cup spinach sautéed and drained
  • 1 small onion caramelized
  • ½ cup mushrooms sautéed and drained
  • 4 slices bacon cooked and crumbled
  • 1 tsp fresh thyme chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • pinch nutmeg

Instructions
 

  • In a large bowl, combine flour and cold butter. Using a pastry cutter, mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • Roll out the chilled dough on a floured surface and fit it into a 9-inch tart pan. Trim the excess dough and refrigerate for 15 minutes. Preheat the oven to 375°F (190°C). Blind bake the crust for 15 minutes with pie weights, then remove the weights and bake for an additional 10 minutes until lightly golden.
  • In a large bowl, whisk together the eggs, heavy cream, and milk. Stir in the Gruyère, sautéed spinach, caramelized onion, sautéed mushrooms, bacon, thyme, salt, pepper, and nutmeg.
  • Pour the filling into the pre-baked crust, spreading it evenly. Bake the quiche in the preheated oven for 35-40 minutes, or until the filling is set and slightly golden on top. Let the quiche cool for 10 minutes before slicing and serving.

Notes

Ensure that the vegetables are well-drained to avoid excess moisture in the filling. The quiche can be made a day ahead and reheated before serving. Experiment with different cheeses and herbs to customize the flavor profile.
