Main Ingredients

  • 12 oz pasta (fettuccine or penne)
  • 2 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ cup reserved pasta water starchy water from cooking pasta
  • ¼ tsp salt adjust to taste
  • ¼ tsp black pepper freshly ground
  • ¼ tsp nutmeg (optional)
  • ½ cup chopped fresh parsley for garnish

Optional Additions

  • Optional grilled chicken or sautéed shrimp for added protein

Instructions
 

  • Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1/2 cup of pasta water and drain the pasta.
  • In a skillet, melt the butter over medium heat and sauté the minced garlic until fragrant and lightly golden, about 1-2 minutes.
  • Add the heavy cream to the skillet and simmer for 2-3 minutes to slightly reduce the sauce.
  • Gradually whisk in the Parmesan cheese until the sauce is smooth and well-emulsified, adding the reserved pasta water to achieve the desired consistency.
  • Season with salt, pepper, and nutmeg (if using). Toss the cooked pasta in the sauce until well coated.
  • Stir in the chopped parsley and optional protein if desired. Serve immediately, garnished with extra Parmesan and parsley.

Notes

For best results, use freshly grated Parmesan and reserve pasta water before draining. Adjust seasoning gradually to maintain a balanced flavor.
