Instructions
Preheat the oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sauté until softened and fragrant.
Add the chopped spinach to the skillet and cook until wilted and excess moisture has evaporated.
In a mixing bowl, combine the artichokes, cream cheese, sour cream, Greek yogurt, mozzarella, Parmesan, nutmeg, cayenne pepper, salt, and pepper. Stir well.
Transfer the spinach mixture to a greased 9x9-inch baking dish and spread evenly.
In a small bowl, mix breadcrumbs with melted butter and the remaining Parmesan cheese. Sprinkle over the casserole.
Bake for 25-30 minutes, or until the top is golden and the casserole is bubbly.
Let the casserole rest for 5-10 minutes before serving.
Notes
Make sure to thoroughly drain and squeeze the spinach to avoid a watery casserole. Experiment with different cheeses for varied flavors.
