Ingredients
  

For the Salad

  • 2 heads romaine lettuce washed and chopped
  • ½ cup Parmesan cheese freshly grated
  • 1 cup homemade croutons

For the Croutons

  • 3 cups rustic bread cubes day-old preferred
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • salt and pepper to taste

For the Dressing

  • 2 cloves garlic minced
  • 4 fillets anchovy or 1 tsp anchovy paste
  • 1 tsp Dijon mustard
  • 1 lemon juiced
  • 1 yolk egg or 2 tbsp mayonnaise for safer version
  • ½ cup extra virgin olive oil
  • ¼ cup Parmesan cheese freshly grated
  • salt and freshly ground black pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C). Toss bread cubes with olive oil, minced garlic, salt, and pepper. Spread evenly on a baking sheet and bake for 10–15 minutes until golden brown.
  • In a bowl, combine garlic, anchovy fillets, Dijon mustard, lemon juice, and egg yolk or mayonnaise. Whisk to blend.
  • Slowly drizzle in olive oil while whisking continuously until emulsified. Stir in Parmesan and season with salt and pepper.
  • Place romaine lettuce in a large mixing bowl. Add dressing and toss until evenly coated.
  • Add croutons and more grated Parmesan on top. Serve immediately with optional grilled chicken or shrimp.

Notes

Use pasteurized egg yolk or mayo for food safety. Adjust anchovy quantity to personal taste. Chill lettuce beforehand for crispness.
