  • 4 large handmade tlayuda tortillas Ensure they are fresh for optimal crispness
  • 2 cups refried black beans Seasoned with salt and a squeeze of lime
  • 1 ½ cups shredded Oaxacan cheese (quesillo)
  • 1 ripe avocado, thinly sliced
  • 1 cup grilled seasonal vegetables such as zucchini, bell peppers, and red onion
  • ½ cup thinly sliced chorizo or grilled steak optional for non-vegetarian version
  • 1 cup roasted tomato-chipotle salsa
  • ½ cup fresh cilantro leaves
  • ¼ cup crumbled queso fresco optional
  • 2 tbsp crema or sour cream
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly brush each tlayuda tortilla with olive oil and toast them on a preheated cast-iron skillet or comal over medium heat until crisp on both sides. Transfer to a baking sheet and warm in the oven for an additional 5 minutes.
  • Spread a generous layer of the seasoned refried black beans evenly over each tortilla.
  • Sprinkle a generous portion of shredded Oaxacan cheese over the beans. If using, add a layer of thinly sliced chorizo or grilled steak.
  • Arrange the grilled seasonal vegetables and avocado slices evenly on the tortilla.
  • Drizzle the roasted tomato-chipotle salsa over the toppings, then return the assembled tlayudas to the oven for 3–5 minutes to allow the cheese to melt slightly.
  • Remove from the oven and finish with a drizzle of crema, a sprinkle of fresh cilantro, and a dusting of crumbled queso fresco. Season with salt and pepper to taste before serving.

Notes

Ensure the tortillas are toasted evenly for an ideal crisp texture; adjust toasting time based on your equipment. For a vegetarian version, omit the chorizo or steak. Experiment with the spice level in the salsa to suit your taste.
