  • lbs ground beef (80/20 blend)
  • 4 slices smoked gouda cheese
  • 8 slices thick-cut bacon
  • 1 large sweet onion, cut into ½-inch rings
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 4 brioche buns, toasted
  • arugula leaves for freshness

Chipotle Mayo

  • ½ cup mayonnaise
  • 1–2 chipotle peppers in adobo sauce, minced
  • 1 tsp lime juice

Instructions
 

  • Soak the onion rings in buttermilk for at least 30 minutes. Meanwhile, mix flour, garlic powder, and paprika in a bowl.
  • Heat vegetable oil in a deep fryer to 350°F (175°C). Dredge onion rings in the flour mixture and fry until golden brown. Drain on paper towels.
  • Cook the bacon in a skillet until crispy. Drain on paper towels.
  • Shape ground beef into four patties. Season with salt and pepper. Cook over medium-high heat for 4–5 minutes per side. Add gouda during the last minute to melt.
  • Mix mayonnaise, minced chipotle peppers, and lime juice to make the chipotle mayo.
  • Spread chipotle mayo on the bottom bun. Add arugula, the beef patty, bacon, and onion rings. Top with the other half of the bun and serve immediately.

Notes

For a spicier burger, add extra chipotle peppers to the mayo. Onion rings can be prepared a day in advance and reheated in the oven.
