Ingredients
  

Crust Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup unsalted butter, melted

Chocolate Filling Ingredients

  • 2 cups whole milk
  • ¾ cup heavy cream
  • 4 oz bittersweet chocolate, finely chopped
  • 4 oz semisweet chocolate, finely chopped
  • 3 tbsp cornstarch
  • ¼ cup granulated sugar
  • 3 large egg yolks
  • 1 tsp vanilla extract
  • 1 tsp espresso powder optional

Whipped Cream Topping

  • 2 cups heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions
 

  • In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press mixture into the bottom and sides of a 9-inch pie pan. Refrigerate for 30 minutes to set.
  • In a medium saucepan, whisk together milk, heavy cream, cornstarch, and sugar over medium heat. Stir constantly until the mixture thickens, about 5-7 minutes.
  • Remove from heat and stir in the chopped chocolates. Whisk until melted and smooth. Add the egg yolks, vanilla extract, and espresso powder. Return to low heat for 2-3 minutes, stirring constantly.
  • Pour the chocolate filling into the prepared crust. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Refrigerate for at least 4 hours or until fully set.
  • In a large bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form. Spread over the chilled pie.
  • Garnish with shaved chocolate or a drizzle of caramel sauce if desired. Serve chilled.

Notes

For added depth of flavor, use a mix of bittersweet and semisweet chocolate. You can also add a layer of chocolate ganache between the filling and whipped cream for extra richness.
