Easy One-Pot Tomato Basil Pasta

Ingredients
  

Main Ingredients

  • 12 oz penne or fusilli pasta uncooked
  • 2 tbsp olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 can diced fire-roasted tomatoes 14.5 oz can
  • 2 ½ cups chicken broth or vegetable broth
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes optional
  • 1 cup fresh spinach or kale roughly chopped
  • ¼ cup grated Parmesan cheese plus more for topping
  • 2 tbsp fresh basil chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and cook for 2–3 minutes until softened.
  • Stir in the minced garlic and cook for another 30 seconds until fragrant.
  • Add the diced tomatoes (with juice), chicken broth, pasta, Italian seasoning, and red pepper flakes. Stir to combine.
  • Bring the mixture to a boil. Reduce heat to medium-low, cover, and simmer for 10–12 minutes, stirring occasionally, until the pasta is tender.
  • Stir in the chopped spinach and cook for another 2–3 minutes until wilted.
  • Remove from heat and stir in the grated Parmesan until melted. Top with chopped basil and more cheese before serving.

Notes

Add more broth if the pasta seems dry while cooking. Substitute gluten-free pasta for a gluten-free version. Add cooked chicken or sausage for extra protein.
