Ingredients
  

For the Pretzel Buns

  • 3.5 cups all-purpose flour plus extra for kneading
  • 2.25 teaspoons active dry yeast
  • 1 tablespoon brown sugar
  • 1.25 cups warm water around 110°F
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon kosher salt
  • 0.33 cup baking soda for boiling solution
  • coarse salt for sprinkling (pretzel salt or flaky sea salt)

For the Patties

  • 1.5 pounds ground beef (80% lean)
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder

Toppings

  • 4 slices mild Swiss cheese or cheese of your choice
  • 1 large onion, caramelized caramelized in butter (optional)
  • 4 leaves butter lettuce or romaine
  • German-style mustard or Dijon mustard

Instructions
 

  • In a mixing bowl, combine the warm water, brown sugar, and yeast. Allow the mixture to sit for 5 minutes until foamy, then stir in the melted butter and kosher salt. Gradually add flour until a shaggy dough forms and knead for 8–10 minutes until smooth.
  • Place the dough in a lightly greased bowl, cover with plastic wrap or a damp towel, and let it rise for about 1 hour or until doubled in size.
  • Punch down the dough and divide it into 4 equal portions. Shape each portion into a round bun and place them on a parchment-lined baking sheet. Cover and let rest for 15–20 minutes.
  • Preheat your oven to 425°F (220°C). Bring a large pot of water to a boil and carefully stir in the baking soda (the mixture will foam). Lower each bun into the boiling water for 30 seconds per side, then return them to the baking sheet.
  • Sprinkle coarse salt over the buns and bake for 12–15 minutes until they develop a dark golden crust. Remove and let cool on a wire rack.
  • Season the ground beef with kosher salt, freshly ground black pepper, garlic powder, and onion powder. Form the meat into 4 patties.
  • Cook the patties on a grill or in a skillet over medium-high heat for 3–4 minutes per side for medium doneness. Top each patty with a slice of Swiss cheese during the last minute of cooking to allow it to melt.
  • Slice each pretzel bun in half. Spread German-style mustard on the bottom half, then layer with butter lettuce, the cooked patty with melted cheese, caramelized onions, and any additional optional garnishes. Top with the bun crown and serve immediately.

Notes

For best results, use a baking soda bath as a safe alternative to a traditional lye bath. Adjust flour and water amounts as needed based on humidity, and ensure proper resting time to develop optimal flavor and texture.
