Ingredients
  

For the Berry Filling

  • 4 cups mixed berries blueberries, raspberries, blackberries
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 2 tablespoons cornstarch

For the Biscuit Topping

  • 1 ¼ cups all-purpose flour
  • ¼ cup almond flour
  • ¼ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter cold, cubed
  • ½ cup buttermilk

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the berries, sugar, lemon juice, lemon zest, and cornstarch. Stir until the berries are evenly coated. Pour the berry mixture into a 9-inch baking dish.
  • In another bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, cinnamon, and salt.
  • Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  • Pour in the buttermilk and stir until just combined. The dough should be slightly sticky.
  • Drop spoonfuls of the biscuit dough over the berry filling, leaving some gaps for the filling to bubble through.
  • Bake for 35-40 minutes, or until the topping is golden brown and the berry filling is bubbling.
  • Let the cobbler cool for 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

Ensure the butter remains cold when mixing it into the flour mixture, as this helps create a flaky topping. You can substitute frozen berries if fresh berries are not available; however, increase the cornstarch by 1 tablespoon to account for the extra moisture.
