Golden Double-Fry French Fries

Ingredients
  

Main Ingredients

  • 2 lb russet potatoes scrubbed, peeled optional
  • 2 Tbsp distilled white vinegar
  • 2 qt water
  • 1 Tbsp kosher salt plus more for seasoning
  • peanut oil or neutral oil with high smoke point, for frying

Optional Finishing Salt Blend

  • ½ tsp garlic powder
  • ¼ tsp finely minced fresh rosemary

Instructions
 

  • Cut the potatoes into 3/8-inch sticks. Rinse thoroughly under cold water to remove excess starch.
  • Place the cut fries in a large bowl of ice water and soak for 30 minutes. Drain well.
  • Bring water, vinegar, and 1 tablespoon of kosher salt to a boil. Add fries and simmer for 7 minutes until just tender. Drain and dry thoroughly.
  • Spread the blanched fries on a towel-lined sheet pan and refrigerate or flash-freeze for 15 minutes to remove surface moisture.
  • Heat oil in a Dutch oven to 325°F (165°C). Fry the potatoes in batches for about 4 minutes until pale and flexible. Remove and drain on a wire rack.
  • Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 1.5–2 minutes until golden and crisp. Drain well.
  • Immediately season the fries with additional kosher salt or a garlic-rosemary finishing salt if desired. Serve hot.

Notes

For the best texture, make sure fries are thoroughly dry before frying. Blanching with vinegar helps strengthen the fries' structure for extra crispiness. Fries can be frozen after the first fry and cooked straight from frozen.
