  • 8-10 slices thick-cut bacon for wrapping
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 tsp garlic powder
  • 1 tbsp fresh rosemary, finely chopped
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika

Instructions
 

  • In a small bowl, whisk together olive oil, kosher salt, black pepper, garlic powder, rosemary, brown sugar, apple cider vinegar, and smoked paprika. Rub the mixture evenly over the pork tenderloin and let it marinate for 20-30 minutes.
  • Preheat your grill for a two-zone setup. Wrap the marinated pork tenderloin with thick-cut bacon, ensuring an even coverage.
  • Sear the bacon-wrapped pork over direct high heat for 2-3 minutes per side until the bacon begins to crisp.
  • Transfer the pork to the cooler, indirect heat side of the grill. Close the lid and cook until the internal temperature reaches 145°F, approximately 15-20 minutes.
  • Remove the pork from the grill, tent it with aluminum foil, and let it rest for 5-10 minutes before slicing and serving warm.

Notes

Allowing the pork to rest before and after grilling helps redistribute juices for optimal tenderness and flavor. A meat thermometer is recommended to ensure perfect doneness.
