Main Ingredients

  • 2 whole red snappers (cleaned and scaled)
  • 3 tbsp olive oil
  • 2 limes (juice and zest)
  • 2 garlic cloves, minced
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp fresh parsley, chopped
  • salt and pepper to taste
  • 1 tsp smoked paprika optional
  • 1 red chili, thinly sliced optional

Instructions
 

  • Preheat the grill to medium-high heat and oil the grates.
  • In a mixing bowl, combine olive oil, lime juice, lime zest, minced garlic, cilantro, parsley, salt, pepper, smoked paprika, and red chili.
  • Pat the red snappers dry and score the skin lightly to allow the marinade to penetrate.
  • Brush the marinade generously over the fish and let it rest for 15 minutes at room temperature.
  • Grill the fish for 6-8 minutes per side, or until the flesh flakes easily with a fork.
  • Remove from the grill, garnish with extra fresh herbs if desired, and serve immediately.

Ensure the grill is properly preheated and the fish is not overcooked for optimal flavor and texture. Adjust seasoning as needed.
