Ingredients
  

Main Ingredients

  • 1 each red bell pepper, cut into 1-inch pieces
  • 1 each yellow bell pepper, cut into 1-inch pieces
  • 1 each zucchini, sliced into thick rounds
  • 1 each red onion, cut into wedges
  • 10 pieces button mushrooms, cleaned
  • 1 cup cherry tomatoes

Marinade

  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 3 cloves garlic, minced
  • 1 lemon, zest and juice
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • to taste salt
  • to taste black pepper

Optional Protein

  • 200 g firm tofu, pressed and cubed optional

Instructions
 

  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • In a large mixing bowl, combine the vegetables with the marinade ingredients. Toss well to ensure even coating.
  • Optionally, blanch the bell peppers and zucchini for 2 minutes, then transfer to ice water to preserve color and texture.
  • Thread the vegetables (and tofu, if using) onto the skewers, alternating the pieces for a balanced mix.
  • Preheat your grill to 400°F. Grill the skewers for 10-15 minutes, turning occasionally until the vegetables are tender and slightly charred.
  • Garnish with fresh basil leaves and serve immediately.

Notes

For best results, use fresh, seasonal vegetables and ensure even cutting for uniform cooking. Adjust seasoning to taste.
