Ingredients
  

Crust

  • 2 ½ cups all-purpose flour
  • ½ cup unsalted butter chilled and cubed
  • ½ cup leaf lard chilled and cubed
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon salt
  • 4-6 tablespoons ice water

Filling

  • 6 cups mixed apples Granny Smith, Honeycrisp, Braeburn; peeled and sliced
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cardamom
  • teaspoon ground ginger
  • 1 tablespoon butter cut into small pieces

Instructions
 

  • In a large bowl, combine the flour and salt. Cut in the butter and lard until the mixture resembles coarse crumbs.
  • Stir in the apple cider vinegar, then add ice water, one tablespoon at a time, until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
  • In a large bowl, toss the apples with lemon juice. Add the granulated sugar, brown sugar, flour, cornstarch, cinnamon, nutmeg, cardamom, and ginger. Mix until the apples are evenly coated.
  • Preheat the oven to 425°F (220°C). Roll out one disk of dough on a floured surface to fit a 9-inch pie plate. Transfer the dough to the pie plate.
  • Pour the apple mixture into the crust and dot with butter. Roll out the second disk of dough and place it over the filling. Trim, seal, and crimp the edges. Cut slits in the top crust for steam to escape.
  • Bake for 45-55 minutes, or until the crust is golden and the filling is bubbling. If the edges of the crust begin to brown too quickly, cover them with foil. Let the pie cool before serving.

Notes

Chill the dough well before rolling to ensure it's easier to handle and results in a flakier crust. Adjust the sugar level depending on the sweetness of the apples you use.
