  • 12 oz short pasta (penne or rigatoni)
  • 2 cups cooked turkey, shredded
  • 1 cup leftover stuffing
  • ½ cup dried cranberries
  • ½ cup Brussels sprouts, halved
  • 1 cup turkey gravy
  • ½ cup heavy cream
  • ½ cup Gruyère cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • 1 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh sage, chopped
  • ¼ tsp black pepper
  • ¼ cup toasted pecans (optional, for topping)

Instructions
 

  • Boil the pasta in salted water according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil and butter over medium heat. Add the garlic and Brussels sprouts, sautéing until the Brussels sprouts are tender and slightly caramelized, about 5-7 minutes.
  • Add the shredded turkey, stuffing, cranberries, thyme, sage, and black pepper to the skillet. Stir to combine, then pour in the turkey gravy and heavy cream. Allow the mixture to simmer for 3-5 minutes until slightly thickened.
  • Add the cooked pasta to the skillet, tossing to coat the pasta evenly with the sauce. Stir in the Gruyère cheese until melted and incorporated.
  • Transfer the pasta to a serving dish, sprinkle with Parmesan cheese and toasted pecans (if using), and serve immediately.

Notes

This recipe is perfect for using up Thanksgiving leftovers, but it can also be made with fresh ingredients. Feel free to substitute or add other Thanksgiving vegetables like roasted sweet potatoes or green beans.
