  • 2 boneless, skinless chicken breasts cooked and shredded or chopped
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp Greek yogurt
  • 3 tbsp mayonnaise
  • 1 stalk celery finely chopped
  • ½ cup red grapes halved
  • cup walnuts toasted and roughly chopped
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped

  • 4 leaves lettuce crispy
  • 8 slices whole grain bread toasted

Instructions
 

  • Season the chicken breasts with salt and pepper. Heat olive oil in a frying pan or pot and cook the chicken until fully cooked (about 12–15 minutes). Allow to cool, then shred or chop the chicken.
  • In a mixing bowl, whisk together Greek yogurt, mayonnaise, and lemon juice with a pinch of salt and pepper to create a creamy dressing.
  • Add the shredded chicken, chopped celery, halved red grapes, toasted walnuts, and fresh dill into the bowl. Gently mix until all ingredients are evenly coated with the dressing.
  • Toast the whole grain bread slices lightly. Place a leaf of lettuce on each slice, then generously spread the chicken salad mixture. Top with another slice of toasted bread to form the sandwich.
  • Cut the sandwich in half and serve immediately, or refrigerate for 30 minutes to allow the flavors to meld.

Notes

For best results, allow the chicken salad to chill for at least 30 minutes before assembling the sandwich. Adjust the seasoning as desired. For a healthier twist, you can substitute a portion of the mayonnaise with extra Greek yogurt.
