  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 yellow onion, diced large
  • 2 celery ribs, diced
  • 1 carrot, diced medium
  • 3 cloves garlic, minced
  • ¼ tsp dried thyme
  • ¼ tsp smoked paprika
  • ¼ cup all-purpose flour
  • 4 cups unsalted chicken stock
  • 1.5 lb Yukon Gold potatoes, cubed ½-inch pieces
  • 1 ham bone or shank meaty, for flavor
  • 2 cups diced cooked ham
  • 1 cup evaporated milk (2%)
  • ½ cup plain Greek yogurt room temperature
  • 1 cup shredded sharp white cheddar
  • 1 bay leaf
  • salt and black pepper to taste
  • sliced green onions for garnish

Instructions
 

  • In a Dutch oven, bring chicken stock and ham bone to a simmer while prepping vegetables.
  • In a skillet, heat butter and olive oil. Sauté onion, celery, and carrot for 4 minutes. Add garlic, thyme, and smoked paprika; cook for 30 seconds.
  • Stir in flour and cook for 1 minute until golden. Transfer mixture to the simmering stock.
  • Add potatoes and bay leaf. Simmer for 10–12 minutes until potatoes are tender. Remove ham bone and shred meat into soup if desired.
  • Add evaporated milk and shredded cheddar. Stir to combine and warm through.
  • Remove from heat and stir in Greek yogurt and diced ham. Season with salt and pepper.
  • Mash some potatoes or blend briefly for thicker texture. Garnish with green onions before serving.

Notes

For gluten-free, use a cornstarch slurry instead of flour. For make-ahead, freeze before adding yogurt and cheese and stir them in when reheating.
