Ingredients
  

Soup Base

  • 2 tablespoons olive oil
  • 1 large onion diced
  • 2 carrots peeled and sliced
  • 2 stalks celery sliced
  • 2 zucchinis diced
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon miso paste optional
  • 1 Parmesan rind optional
  • 1 can diced tomatoes (28 ounces)
  • 6 cups vegetable broth
  • 1 can cannellini beans drained and rinsed
  • 1 cup small pasta e.g., ditalini
  • 2 cups fresh spinach leaves
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables start to soften. Add the garlic and cook for an additional 1-2 minutes until fragrant.
  • Stir in the oregano, basil, miso paste, and Parmesan rind. Cook for 1 minute.
  • Add the diced tomatoes and vegetable broth. Bring to a boil, then reduce the heat and let the soup simmer for 15 minutes.
  • Add the cannellini beans and pasta. Continue to simmer for another 10-15 minutes, until the pasta is al dente.
  • Stir in the spinach leaves and cook for an additional 2 minutes until wilted.
  • Remove the Parmesan rind. Season the soup with salt and pepper to taste. Garnish with fresh basil or parsley before serving.

Notes

Feel free to substitute the spinach with other leafy greens like kale or Swiss chard. The miso paste is optional but highly recommended for added depth of flavor. If making the soup ahead of time, cook the pasta separately and add it when reheating to avoid it becoming mushy.
