Ingredients
  

Filling

  • 1 lb ground lamb
  • 1 large onion finely chopped
  • 2 carrots diced
  • 1 cup peas
  • 2 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 cup beef stock
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh rosemary chopped
  • Salt and pepper to taste

Mashed Potato Topping

  • 4 large potatoes peeled and quartered
  • 2 tbsp butter
  • ½ cup cream
  • ½ cup grated cheese optional
  • 1 egg yolk optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, cook the ground lamb over medium heat until browned. Remove and set aside.
  • In the same skillet, add the onions, carrots, and garlic, cooking until softened.
  • Stir in the Worcestershire sauce, tomato paste, and beef stock, bringing to a simmer. Return the lamb to the skillet, add the peas, thyme, and rosemary, and cook until the mixture thickens slightly.
  • Meanwhile, boil the potatoes in salted water until tender. Drain, then mash with butter and cream until smooth. If desired, mix in the egg yolk for a richer texture.
  • Spread the meat mixture into a baking dish and top with the mashed potatoes. If using, sprinkle grated cheese over the potatoes.
  • Bake for 20-25 minutes, or until the top is golden brown and crispy.
  • Let the Shepherd's pie rest for a few minutes before serving.

Notes

For a healthier version, consider substituting the mashed potatoes with mashed cauliflower. This dish can be made ahead of time and refrigerated for up to two days. Reheat in the oven at 350°F until heated through.
