Ingredients
  

Pesto Sauce

  • 3 cups fresh basil leaves
  • 3 cloves garlic minced
  • ½ cup pine nuts or walnuts
  • ½ cup freshly grated Parmesan cheese or nutritional yeast for vegan option
  • ½ cup extra virgin olive oil
  • ¼ cup lemon juice
  • Salt and pepper to taste

Pasta

  • 12 oz pasta of your choice spaghetti, penne, or fusilli
  • ½ cup cherry tomatoes halved (optional)
  • Grilled chicken or shrimp optional, for added protein

Instructions
 

  • Prepare the Pesto: In a food processor, combine the basil leaves, garlic, and pine nuts. Pulse until finely chopped. Slowly add the olive oil while the processor is running until the mixture is smooth. Add the Parmesan cheese (or nutritional yeast) and lemon juice, and pulse until combined. Season with salt and pepper to taste.
  • Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta, reserving 1/2 cup of the pasta water.
  • Combine and Serve: In a large bowl, toss the cooked pasta with the pesto sauce. If the sauce is too thick, add the reserved pasta water, one tablespoon at a time, until you reach the desired consistency. Optionally, add cherry tomatoes and protein of choice. Serve immediately.

Notes

For a creamier pesto, you can add a tablespoon of heavy cream or a dollop of ricotta. Toast the pine nuts (or walnuts) before adding them to the pesto for a richer flavor. This recipe can be stored in the refrigerator for up to 3 days, but it's best enjoyed fresh.
