Ingredients

  • 2 lbs ripe tomatoes (a mix of vine-ripened and plum)
  • 1 medium yellow onion, roughly chopped
  • 4 cloves garlic, peeled
  • 2 cups low-sodium vegetable broth
  • ½ cup roasted red bell pepper, blended
  • ¼ cup extra-virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp sugar optional, to balance acidity
  • salt to taste
  • freshly ground black pepper to taste
  • ¼ cup fresh basil leaves, chopped
  • ¼ cup light cream or coconut cream optional, for creaminess

Instructions
 

  • Preheat your oven to 400°F (200°C). Arrange the tomatoes and garlic on a baking sheet, drizzle with olive oil, and roast for 25–30 minutes until softened and slightly charred.
  • In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5–7 minutes.
  • Transfer the roasted tomatoes, garlic, and roasted red bell pepper to a blender; blend until smooth, then pour the mixture into the pot with the sautéed onions.
  • Add the vegetable broth, balsamic vinegar, and sugar. Bring the mixture to a simmer and cook for 10–15 minutes, stirring occasionally.
  • Stir in the chopped basil and cream (if using), and season with salt and freshly ground black pepper to taste. Allow the soup to heat through for an additional 2–3 minutes.
  • Ladle the soup into bowls and garnish with extra basil leaves if desired. Serve hot.

Notes

Adjust salt and sugar to taste, as the flavor may vary with seasonal produce. For a vegan version, substitute light cream with coconut cream. Roasting times may vary depending on tomato ripeness.
