Equipment

  • Roasting Pan
  • Basting Brush
  • Small Saucepan

Ingredients

Ham

  • 8-10 pounds bone-in ham fully cooked

Glaze

  • ½ cup dark brown sugar
  • ¼ cup honey
  • ¼ cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon smoked paprika
  • 1 tablespoon fresh rosemary finely chopped
  • ½ teaspoon ground cloves
  • ½ cup orange juice
  • ¼ cup bourbon optional

Instructions

  • Preheat the oven to 325°F (165°C). Place the ham on a rack in a roasting pan and score the surface in a diamond pattern.
  • In a small saucepan, combine the brown sugar, honey, Dijon mustard, apple cider vinegar, smoked paprika, rosemary, cloves, orange juice, and bourbon. Bring to a simmer over medium heat, stirring until the sugar is dissolved.
  • Brush the glaze over the ham, making sure to get it into the scored lines. Cover loosely with foil and bake for 1 1/2 to 2 hours, basting with the glaze every 30 minutes.
  • Remove the foil for the last 30 minutes of cooking to allow the glaze to caramelize. Let the ham rest for 15 minutes before slicing.

Notes

For a more intense flavor, let the ham marinate in the glaze overnight in the refrigerator before baking.
