Ingredients

  • 1 lb ground beef (80/20 blend)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • 4 slices bacon, cooked and crumbled
  • 2 fresh jalapeños, diced (seeds removed for less heat)
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 tbsp roasted garlic puree (optional)
  • 1 tbsp avocado oil (for cooking)

  • 4 lettuce leaves or low-carb burger buns

Instructions
 

  • In a mixing bowl, combine the ground beef, salt, black pepper, smoked paprika, and garlic powder. Mix gently without overworking the meat.
  • Divide the meat into four equal portions and shape each into a patty about 3/4-inch thick.
  • In a separate bowl, stir together the softened cream cheese, shredded cheddar cheese, diced jalapeños, crumbled bacon, and roasted garlic puree (if using).
  • Heat the avocado oil in a skillet or on a grill over medium-high heat. Cook each patty for about 3-4 minutes on each side, or until desired doneness.
  • Reduce heat to medium (or move patties to a cooler part of the grill), then top each patty with the jalapeño popper mixture. Cover briefly to allow the cheese to melt.
  • Place each patty on a lettuce leaf or low-carb bun. Serve hot and enjoy!

Notes

For extra heat, keep some jalapeño seeds. You can also add a dash of hot sauce to the cheese mixture. Store leftovers in the refrigerator for up to three days.
