  • 1 8-ounce wheel of Brie cheese (double- or triple-cream)
  • 3 tablespoons wildflower honey, plus extra for drizzling
  • ¼ cup chopped roasted almonds (or preferred nuts)
  • ¼ cup dried cranberries (or dried figs)
  • 1 teaspoon finely chopped fresh rosemary
  • Pinch sea salt
  • 1 tablespoon softened butter (for greasing the baking dish)

  • Crusty bread or assorted crackers
  • Fresh fruit slices (e.g., apples, pears)

Instructions
 

  • Preheat the oven to 375°F (190°C). Lightly grease a small, oven-safe dish with softened butter.
  • Place the Brie wheel in the dish. Using a sharp knife, score the top of the Brie in a crosshatch pattern.
  • Drizzle half of the honey over the top of the Brie, allowing it to seep into the cuts.
  • Evenly distribute the chopped almonds, dried cranberries, and chopped rosemary over the Brie.
  • Add a light sprinkle of sea salt to enhance the flavors.
  • Bake for about 10–15 minutes, or until the Brie is visibly soft and slightly oozing at the edges.
  • Remove from the oven and carefully transfer to a serving platter if desired. Drizzle with the remaining honey.
  • Serve immediately with crusty bread, crackers, or fresh fruit slices.

Notes

To prevent the Brie from becoming too runny, avoid overbaking. If using puff pastry, wrap the Brie completely before baking to create a crisp, golden crust. For a bolder flavor, try drizzling with a balsamic reduction instead of honey.
