Equipment

  • Grill (charcoal or gas)
  • Tongs
  • Mixing Bowl
  • Small bowl for butter sauce
  • Serving platter

Ingredients

Main Ingredients

  • 2 pounds fresh clams scrubbed and purged
  • 4 tbsp unsalted butter melted
  • 2 cloves garlic finely minced
  • 1 lemon juiced, plus wedges for serving
  • 2 tbsp fresh parsley chopped
  • 1 tbsp olive oil
  • 1 pinch red pepper flakes optional
  • salt and freshly ground black pepper to taste

Instructions

  • Rinse the clams under cold water, discarding any that remain open when tapped. Soak in salted water for 20 minutes, then drain and rinse again.
  • Preheat grill to medium-high heat. If using charcoal, wait for coals to turn white-hot.
  • In a bowl, mix melted butter, garlic, lemon juice, parsley, olive oil, and red pepper flakes. Season with salt and pepper.
  • Place the clams directly on the grill. Close lid and cook for 5–7 minutes, removing each clam as it opens.
  • Transfer to a platter and drizzle with the garlic-lemon butter mixture. Serve with lemon wedges.

Notes

Always discard any clams that do not open after grilling. For easier cleanup, clams can also be placed in a grill-safe basket or foil tray.
