  • 3 cups broccoli florets fresh or thawed from frozen
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1.5 cups whole milk warmed
  • 0.5 cup chicken broth
  • 2 tbsp grated Parmesan cheese
  • 1 cup shredded cheddar cheese plus extra for topping
  • 2 cups cooked chicken shredded or cubed
  • 1 tsp Dijon mustard
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper or to taste
  • 1 pinch nutmeg optional

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  • Steam or blanch broccoli until just fork-tender. If blanching, place in ice water immediately to stop cooking, then drain well.
  • In a saucepan, melt butter over medium heat. Whisk in flour to form a roux. Slowly pour in warm milk, whisking constantly.
  • Add chicken broth and continue to whisk until sauce thickens. Stir in Dijon mustard, garlic powder, onion powder, salt, pepper, and optional nutmeg.
  • Stir in Parmesan and cheddar cheese until fully melted and smooth.
  • Arrange chicken and broccoli evenly in the baking dish. Pour cheese sauce over the top, making sure everything is well-coated.
  • Sprinkle additional shredded cheddar cheese over the top.
  • Bake for 20–25 minutes, or until bubbly and lightly browned. Let rest for 5 minutes before serving.

Notes

Blanching broccoli and shocking it in ice water helps maintain color and texture. Use leftover or rotisserie chicken for quicker prep. Adjust sauce thickness by reducing or increasing milk slightly.
