  • 1 tbsp vegetable oil
  • 1 pound ground beef (80/20 lean-to-fat ratio)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt or to taste
  • ½ tsp freshly ground black pepper
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 1 can refried beans (15 oz, preferably low-sodium)
  • 1 cup shredded cheddar or Mexican cheese blend
  • 8 large flour tortillas

Instructions
 

  • Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds.
  • Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5–6 minutes. Drain any excess fat.
  • Mix in chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Stir in the beef broth and tomato paste. Reduce the heat to medium-low and simmer for 10 minutes, allowing the flavors to meld.
  • Warm the flour tortillas in a skillet or microwave to make them pliable. Spread a thin layer of refried beans onto each tortilla. Add a generous portion of the beef mixture, followed by cheese and any desired toppings.
  • Fold the sides of the tortilla inward and roll tightly from one end to form a burrito. Serve immediately, or toast in a skillet for a golden exterior.

Notes

For extra flavor, marinate the beef with a mix of lime juice and spices before cooking. To make ahead, assemble burritos without toppings, wrap tightly in foil, and freeze for up to 3 months.
