  • 8 oz rice noodles or wheat noodles, depending on preference
  • 1 tbsp vegetable oil
  • 1 medium onion thinly sliced
  • 2 cloves garlic minced
  • 1 tbsp grated ginger
  • 1–2 tbsp curry paste Thai red or yellow, per spice preference
  • 1 tsp curry powder optional, for extra depth
  • 1 can coconut milk 13.5 oz can
  • 2 cups chicken or vegetable broth
  • 1 tbsp fish sauce or soy sauce for a vegetarian option
  • 1 tsp brown sugar or palm sugar
  • 1 cup mixed vegetables e.g., bell peppers, carrots, green beans
  • 1 cup protein of choice shrimp, chicken, tofu
  • 1 lime juice of
  • fresh cilantro for garnish
  • sliced chilies for garnish
  • lime wedges for serving

Instructions
 

  • Prepare the noodles according to the package instructions. Drain and set aside.
  • In a saucepan or wok, heat the vegetable oil over medium-high heat. Add the onion, garlic, and ginger. Sauté until the onion becomes translucent.
  • Stir in the curry paste (and optional curry powder). Cook for 1 minute, allowing the spices to release their aromas.
  • Add the coconut milk, broth, fish sauce (or soy sauce), and brown sugar. Stir to combine. Reduce the heat to medium and let it simmer for about 5 minutes.
  • Add the vegetables and protein of choice. Simmer until cooked through—about 5–7 minutes.
  • Stir in the lime juice, taste, and adjust seasonings if necessary.
  • Add the drained noodles and toss gently to coat them in the curry sauce.
  • Divide into bowls and garnish with fresh cilantro, sliced chilies, and lime wedges. Serve immediately.

Notes

Adjust spice levels by varying the amount of curry paste. Use low-sodium broth or coconut milk to better control saltiness. For a thinner consistency, add extra broth.
