  • 1 ½ lbs mixed mushrooms (e.g., cremini, button, porcini) sliced
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp unsalted butter optional, for richness
  • 3 cloves garlic thinly sliced
  • 2 tbsp dry white wine optional, for acidity
  • 2 tbsp chopped fresh parsley plus extra for garnish
  • 1 tsp chopped fresh thyme
  • ½ tsp sea salt or to taste
  • ¼ tsp freshly ground black pepper or to taste

Instructions
 

  • Gently clean the mushrooms with a damp cloth or paper towel to remove dirt. Slice them evenly for uniform cooking.
  • Heat olive oil in a large skillet over medium-high heat. If using butter, add it now and let it melt.
  • Add garlic to the skillet and sauté for about 30 seconds until fragrant, but not browned.
  • Spread mushrooms in a single layer in the skillet. Cook undisturbed for 3 minutes to allow browning, then stir occasionally. Continue cooking for 5-7 more minutes until they release moisture and begin to brown.
  • Stir in the white wine, if using, and cook for 1-2 minutes until the liquid has mostly evaporated. Add parsley, thyme, salt, and pepper.
  • Taste and adjust seasoning as needed. Garnish with additional parsley before serving.

Notes

Avoid overcrowding the skillet to ensure even browning. Experiment with different mushroom varieties for a unique flavor profile.
