  • 2 pounds Russet potatoes, peeled and diced
  • 1 medium yellow onion, finely chopped
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp clarified butter
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • salt and freshly ground black pepper to taste
  • ¼ cup fresh parsley, chopped optional

Instructions
 

  • Rinse the diced potatoes in cold water and soak for 30 minutes to remove excess starch. Drain and pat dry with paper towels.
  • In a large pot, add the potatoes to boiling salted water and parboil for 5 minutes until just tender. Drain and let them air-dry for 5 minutes.
  • Heat olive oil and clarified butter in a large skillet over medium-high heat. Add the chopped onion and red bell pepper, and sauté for 3–4 minutes until softened.
  • Add the potatoes, sprinkle with smoked paprika, dried thyme, salt, and pepper. Let cook undisturbed for 5 minutes to form a crisp crust, then gently toss and continue frying for another 5–7 minutes until evenly golden.
  • Add minced garlic during the last 2 minutes of cooking, stirring well to combine.
  • Remove from heat, garnish with fresh parsley if desired, and serve hot.

Notes

Ensure the potatoes are thoroughly dried after soaking and parboiling to prevent splattering. Avoid overcrowding the skillet to maintain a crispy texture.
