  • 1 lb ground lamb (85/15)
  • 1 clove garlic, minced
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • 2 tbsp chopped fresh mint
  • 2 tbsp chopped fresh cilantro

Mint-Tzatziki Sauce

  • 1 cup full-fat Greek yogurt
  • ½ cup finely chopped cucumber (seeds removed)
  • 1 tbsp fresh lemon juice
  • 1 small garlic clove, minced
  • 1 tbsp chopped fresh mint
  • ¼ tsp salt
  • tsp black pepper

Toppings

  • 4 soft brioche buns
  • 4 slices heirloom tomato
  • 4 slices red onion (lightly grilled)
  • butter lettuce leaves as needed

Instructions
 

  • In a mixing bowl, combine the ground lamb with minced garlic, ground cumin, smoked paprika, kosher salt, black pepper, chopped fresh mint, and cilantro. Mix gently to avoid overworking the meat.
  • Form the mixture into 4 equal patties, making a shallow dimple in the center of each to prevent puffing during grilling.
  • Preheat your grill to medium-high heat using a two-zone setup. Grill the patties over direct heat for about 3 minutes per side, then move them to indirect heat and cook until the internal temperature reaches 160°F (approximately 2-3 minutes per side more).
  • While the patties rest for 3 minutes, prepare the mint-tzatziki sauce by mixing Greek yogurt, chopped cucumber, lemon juice, minced garlic, fresh mint, salt, and black pepper in a bowl.
  • Lightly toast the brioche buns on the grill.
  • Assemble each burger by spreading a generous layer of the mint-tzatziki sauce on the bottom bun, then adding a lettuce leaf, the grilled lamb patty, a slice of heirloom tomato, and a slice of grilled red onion. Top with the remaining bun and serve immediately.

Notes

For optimal results, use high-quality 85/15 ground lamb and avoid overmixing to ensure tender patties. Adjust seasonings as desired and serve immediately for the best flavor and texture.
