Instructions
In a medium saucepan over medium heat, melt the butter. Stir in the flour and whisk continuously for about 1 minute to create a roux.
Gradually pour in the warmed milk while whisking, ensuring a smooth mixture. Cook for 2-3 minutes until thickened.
If using sodium citrate, add it now and whisk until fully dissolved.
Lower the heat to medium-low. Add the shredded cheddar and pepper jack cheese a handful at a time, stirring until fully melted.
Stir in the Sriracha sauce, garlic powder, onion powder, and salt. Taste and adjust seasoning or spice level as needed.
Transfer the dip to a serving bowl and garnish with chopped green onions or cilantro if desired.
Serve immediately with tortilla chips, pretzels, or fresh veggies.
Notes
For a thicker dip, reduce the milk slightly. Keep warm in a slow cooker set to 'Warm' for extended serving.
