Ingredients
  

Main Ingredients

  • 4 cups fresh spinach, chopped approximately 6 ounces
  • 1 tbsp olive oil for sautéing
  • ½ small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup crumbled feta cheese
  • 1 cup cooked chickpeas, mashed
  • 1 egg, lightly beaten or flax egg for vegan option
  • ½ cup breadcrumbs use gluten-free if preferred
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • ½ tsp salt adjust to taste
  • 2 tbsp fresh parsley, finely chopped optional

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add diced onion and garlic, cooking until fragrant and softened, about 3-4 minutes.
  • Wilt the spinach in the same skillet, stirring until just tender. Transfer to a colander and gently press to remove excess liquid.
  • In a large bowl, combine the wilted spinach, cooked onion and garlic, feta, mashed chickpeas, oregano, salt, pepper, and parsley. Mix well.
  • Add the beaten egg and breadcrumbs to the mixture. Stir thoroughly to bind the ingredients. If the mixture is too wet, add more breadcrumbs; if too dry, add a tablespoon of water.
  • Shape the mixture into 4 evenly sized patties and set them aside.
  • Heat a drizzle of oil in a skillet over medium-high heat. Cook the patties for 3-4 minutes on each side, or until golden brown and cooked through.
  • Serve warm on burger buns or pita bread, with desired toppings such as lettuce, tomato, or tzatziki sauce.

Notes

For a vegan option, substitute the feta with plant-based cheese and use a flax egg. These patties can be frozen for up to 3 months; reheat in a skillet or oven before serving.
