  • 2 cups fresh fava beans shelled
  • 1 cup Pecorino Toscano cheese cubed or shaved
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp sea salt
  • ½ tsp freshly ground black pepper
  • ¼ cup fresh mint leaves finely chopped

Instructions
 

  • Bring a pot of salted water to a boil. Add the fava beans and blanch for 2-3 minutes. Drain and immediately transfer the beans to an ice bath to stop the cooking process. Once cooled, peel the outer skin to reveal the bright green beans.
  • While the beans are cooling, cut the Pecorino Toscano into small cubes or shave it into thin slices, depending on your preference.
  • In a large mixing bowl, combine the blanched fava beans, pecorino cheese, and chopped mint leaves.
  • Drizzle the extra virgin olive oil and fresh lemon juice over the mixture. Season with sea salt and freshly ground black pepper. Toss gently to combine all the ingredients.
  • Transfer to a serving platter and enjoy immediately, preferably with crusty bread on the side.

Notes

Ensure that the fava beans are fresh and young for the best flavor and texture. If Pecorino Toscano is unavailable, Pecorino Romano or Parmigiano-Reggiano can be used as substitutes. For a more rustic presentation, consider serving the dish directly from a wooden bowl.
