Ingredients
  

Main Ingredients

  • 400 g spaghetti or fusilli pasta
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 small red onion thinly sliced
  • 1 red bell pepper julienned
  • 1 green bell pepper julienned
  • 1 cup pineapple chunks

Sweet and Sour Sauce

  • cup rice vinegar
  • ¼ cup honey
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • ½ cup pineapple juice
  • ½ tsp chili flakes optional, adjust to taste
  • salt and pepper to taste

Garnish

  • fresh basil or cilantro for garnish

Instructions
 

  • Cook pasta in salted water until al dente according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add garlic and onion; sauté until softened.
  • Add bell peppers and pineapple chunks. Stir-fry for 3–4 minutes until slightly tender.
  • In a bowl, whisk together rice vinegar, honey, soy sauce, tomato paste, pineapple juice, and chili flakes. Season with salt and pepper.
  • Pour the sauce into the skillet and bring to a simmer. Let it reduce slightly until it thickens.
  • Add cooked pasta to the skillet and toss until well coated with sauce. Cook for an additional 2 minutes to blend flavors.
  • Serve hot, garnished with fresh basil or cilantro.

Notes

You can swap out the pineapple for mango or orange segments for a different sweet note. Add tofu, shrimp, or chicken for extra protein.
