Ingredients
  

Main Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • ½ cup soy sauce
  • ¼ cup mirin
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil

Burger Assembly

  • 4 brioche or whole-grain buns
  • fresh lettuce leaves
  • 1 large tomato, sliced
  • red onion, thinly sliced
  • Optional pickled cucumbers or radishes optional garnish
  • Optional sriracha mayo optional topping
  • toasted sesame seeds (for garnish)

Instructions
 

  • In a mixing bowl, whisk together soy sauce, mirin, brown sugar, garlic, ginger, rice vinegar, and sesame oil to create the teriyaki marinade.
  • Place the chicken in a resealable bag or shallow dish and pour the marinade over it. Refrigerate for at least 2 hours, preferably overnight.
  • Preheat your grill or skillet to medium-high heat. Remove the chicken from the marinade, letting any excess drip off.
  • Grill or pan-sear the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F.
  • Lightly toast the buns on the grill or in a toaster while the chicken cooks.
  • Assemble each burger by layering fresh lettuce, tomato slices, red onion, and the grilled chicken on the bun. Add optional pickled cucumbers or sriracha mayo, then sprinkle with toasted sesame seeds.
  • Serve immediately and enjoy your Teriyaki Chicken Burger.
