  • 2 ½ cups cake flour
  • 1 ½ cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp cocoa powder
  • 1 ½ cups buttermilk room temperature
  • 2 large eggs room temperature
  • 1 ½ cups vegetable oil
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • 2 tsp red food coloring gel or 1 tbsp natural beet juice

Frosting Ingredients

  • 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp heavy cream

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • Sift together the cake flour, sugar, baking soda, salt, and cocoa powder in a large bowl.
  • In another bowl, whisk together the buttermilk, eggs, vegetable oil, vinegar, vanilla extract, and beet juice or food coloring.
  • Slowly combine the wet ingredients into the dry ingredients, mixing until just combined. Do not overmix.
  • Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then remove and allow them to cool completely on a wire rack.
  • For the frosting: Beat the cream cheese and butter together until smooth. Gradually add the powdered sugar, vanilla extract, and heavy cream. Beat until light and fluffy.
  • Assemble the cake by placing one layer on a serving plate, spreading a thick layer of frosting on top, and then placing the second layer on top. Frost the entire cake and decorate as desired.

Notes

Ensure that all ingredients are at room temperature for the best results. If using natural beet juice for coloring, the cake’s red hue may be more subtle than with synthetic dyes.
