Ingredients
  

Artichoke Dip

  • 1 can artichoke hearts drained and chopped
  • 8 oz cream cheese softened
  • ½ cup Greek yogurt
  • ½ cup mayonnaise
  • 1 cup mozzarella cheese shredded
  • ½ cup Parmesan cheese grated
  • ¼ cup goat cheese crumbled
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • ½ tsp lemon zest
  • ¼ tsp onion powder
  • Salt and pepper to taste

Topping

  • ½ cup panko breadcrumbs
  • 2 tbsp olive oil
  • 2 tbsp grated Parmesan cheese for topping

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large mixing bowl, combine the cream cheese, Greek yogurt, and mayonnaise until smooth.
  • Stir in the mozzarella, Parmesan, goat cheese, garlic, lemon juice, lemon zest, and onion powder. Season with salt and pepper to taste.
  • Fold in the chopped artichoke hearts.
  • Transfer the mixture to a baking dish and spread evenly.
  • In a small bowl, mix the panko breadcrumbs with olive oil and the additional Parmesan cheese.
  • Sprinkle the breadcrumb mixture over the dip.
  • Bake for 25-30 minutes, or until the top is golden brown and the dip is bubbly.
  • Serve hot with crackers, bread, or vegetable sticks.

Notes

For a spicier version, consider adding a pinch of red pepper flakes to the mix. This dip can be made ahead of time and stored in the refrigerator. Simply bake it when you're ready to serve. Experiment with different cheeses for unique flavor profiles.
