  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeño, seeded and minced (optional)
  • 1 can fire-roasted diced tomatoes (14.5 oz)
  • 4 cups low-sodium chicken broth
  • 1 cup corn kernels (fresh or frozen)
  • 1 can black beans, rinsed and drained (optional)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 1 lime, juiced
  • Salt and pepper to taste

Garnishes

  • Tortilla strips (store-bought or homemade)
  • Fresh cilantro, chopped
  • Avocado slices

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent, about 3–4 minutes.
  • Stir in garlic, red and green bell peppers, and jalapeño (if using). Cook for another 2 minutes.
  • Add fire-roasted diced tomatoes, chicken broth, corn, black beans (if using), cumin, chili powder, smoked paprika, salt, and pepper. Stir well and bring to a simmer.
  • Place the chicken breasts into the broth. Cover and let simmer for 20–25 minutes until the chicken is fully cooked.
  • Remove the chicken, shred it using two forks, and return it to the pot. Stir in lime juice and let simmer for another 5 minutes.
  • Ladle soup into bowls and top with crispy tortilla strips, fresh cilantro, and avocado slices.

Notes

Adjust spice levels by increasing or decreasing the amount of jalapeño and chili powder. To make it creamier, add a dollop of sour cream or Greek yogurt before serving.
