Ingredients
  

Salad Ingredients

  • 4 cups watermelon cubed
  • ½ cup goat cheese crumbled
  • ¼ cup mint leaves chopped
  • ¼ cup basil leaves chopped
  • ¼ cup toasted pumpkin seeds
  • ¼ cup cucumber thinly sliced

Dressing Ingredients

  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • ½ tsp smoked paprika
  • salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the watermelon cubes, cucumber slices, chopped mint, and basil.
  • In a small bowl, whisk together the lime juice, olive oil, honey, and smoked paprika. Season with salt and pepper to taste.
  • Pour the dressing over the watermelon mixture and gently toss to coat.
  • Sprinkle the crumbled goat cheese and toasted pumpkin seeds over the salad.
  • Serve immediately, garnished with additional mint leaves if desired.

Notes

For best results, use a ripe watermelon that is firm and sweet. The salad can be made ahead of time, but add the goat cheese and pumpkin seeds just before serving to maintain their texture.
